Real Belgian chocolate must contain at least 30 per cent cocoa, mixed with sugar and cocoa butter. Belgian masters of the historic trade use at least twice that, as much as 85%. Here are some endorphin creations around the world.
Probably the only Belgian chocolatier who controls every step of truffle process, from choosing the bean to creating the single cocoa squares, Marcolini is the chocolate pioneer. His range of products are derived from beans that come from Madagascar, Mexico, Ecuador and Indonesia. In his Brussels shop where chocolate is encased in glass displays, men in sharp suits sip away on espressos and at first glance you’d think you’re in a jewelry boutique.
Straight from Lyon, France, chocolate truffles have been in creation since 1925. A variety of high quality beans come from Haiti, Venezuela and Madagascar, with a selection of citrus, herbal and fruit notes. Richart’s special collection, “Envol”, is made of 49 chocolate cubes that are each adorned with hand-applied cocoa butter designs – that’s 49 reasons to smile.

There are 14 different flavors that are meant to complement the aromas of a cigar, but the truth is, with or without this companion, the chocolates themselves are an ultimate experience, with intriguing, almost feminine shapes, and irresistible accents.
